ABOUT DINNER ON THE BLUFF:
Connect, learn, and dine with experts at Eagle Bluff Environmental Learning Center! Presented annually February through April, Eagle Bluff invites speakers from around the country to speak on a variety of outdoor, educational, and research topics. Paired with a three-course dinner from local partner, Juniper’s restaurant, each event showcases subject matter experts, delicious dishes, and meaningful discussion.
February 28 Speaker: Janssen Hang is the Executive Director and co-founder of the Hmong American Farmers Association (HAFA) a non-profit organization that works to advance the economic, social and cultural property of Hmong farmers in Minnesota through capacity building, cooperative endeavor and advocacy to spur intergenerational and community wealth.
Dinner Menu: – Salad Course: Baby head lettuce, spaghetti squash, radish, taro root, manchego cheese with a lemon poppy seed vinaigrette. – Main Course: Shepherds pie baked potato with root vegetables, red wine mushrooms, grated Parmesan, herbs (Meat and Vegetarian) – Dessert Course: Puppy Chow cake
